Quinoa Tabbouleh (Get lean and mean recipes – compliments of the Spice girl – Gillian Downes)
Have you ever made tabbouleh? This easy Middle Eastern dish is usually made with couscous but we simply adore making it with our Spice and All things nice Quinoa which is one of the healthiest options to use.
Did you know Quinoa is a Superfood? It is rich in fibre, minerals, protein and gluten free.
It works beautifully as an accompaniment with curries, stews, stir fries and is great in salads, so very versatile and it is simple to prepare.
Recipe – Tabbouleh
Cooked quinoa – 2 parts water : 1 part quinoa (boiled for 10 minutes)
- 1 cup cherry tomatoes (halved)
- 1/2 a cup chopped parsley
- 1/2 cup chopped mint
- 1/2 a red onion (chopped)
- 1 garlic clove (peeled and grated)
- Juice from 1/2 a lemon
- Splash of Olive oil
- Salt and pepper
- Feta (optional)
Mix all the ingredients together into the quinoa and serve with a slice of fresh lemon!
